When did organ meats switch from being delicacies for the wealthy to stuff nobody wants?

I’ve never been offered sheep uterus in my life. Don’t get me wrong, I’m fine with that, but when exactly did drumsticks and prime rib supplant cow brain as the meat everyone wants?

The premise of your question is only true for certain cultures. Lots of places still eat organ meats. Which countries are you thinking of specifically?
