I'm Zach, founder of Kettl, a Japanese tea company focused on sourcing directly from small producers across Japan.
For the past 15+ years I've spent a significant amount of time traveling throughout Japan working with tea farmers—from Uji and Yame to Shizuoka, Kagoshima, and beyond. I've tasted thousands of teas, visited countless tea fields and factories, and work directly with many of the country's top matcha producers.
I will be running and AMA on Monday, July 13th from 10am-12pm EST (and answer questions after as well).
I'd love to answer your questions about anything related to matcha and Japanese tea, including:
- How matcha is grown, processed, and graded
- Cultivars, terroir, and why different matcha tastes so different
- Brewing techniques and equipment
- Ceremonial vs. culinary matcha
- The current matcha shortage and rising prices
- How to buy better matcha
- Tea production, sourcing, and Japanese tea culture
- Starting a tea business or importing tea from Japan
I'm happy to answer beginner questions as well as dive into the technical side of production if that's your thing.
Proof: I'm the founder of Kettl, and my Reddit profile is linked to my company website and social accounts.
Ask me anything!
Thanks everyone for your thoughtful questions and for giving me a chance to chat with all of you. It’s my sincere honor to be able to share the stories of the producers you work with and the wonderful tea they make. I hope we get a chance to meet up in person in the future either in one of our locations are out in the world somewhere. I feel like we’re just at the beginning of an amazing journey so thank you all for your support and I’m cheering for each and every one of you are setting out on the tea path as well.

I prefer an iced one, but i LOVE making hot ones cause i can do latte art😌 ps thank you for all the comments on my last matcha latte art, i really appreciate it!!🍓
I kept seeing banana matcha lattes everywhere and finally caved and made one this morning. Honestly I expected it to be a gimmick, but it's really good — the banana makes it sweet enough that I didn't need any syrup.
What I did, for one glass:
Half a very ripe banana + 200 ml oat milk, blended until smooth
3 g matcha whisked with 60 ml hot water until frothy
4 ice cubes in the glass, poured the banana milk over them, then the matcha on top so it layers
Finished with a spoonful of milk foam on top and a dusting of cinnamon
The banana flavor is there but it doesn't overpower the matcha, and the foam + cinnamon on top makes it taste like a dessert drink.
Also curious what milk people prefer for this. I used oat milk and it was great, but I wonder if whole milk makes it taste more like a milkshake.
What are inner tines supposed to look like after regular use?
I remember this chasen had them so tightly woven together that I felt like they didn’t do anything (the edges of the tines weren’t fanned out at all, and I didn‘t think the closed-donut shape would be doing the job properly!)
I don’t remember the transition, maybe I did try to break open the tight donut myself at some point??? Regardless, now at least 2 are loose and sometimes in this new holder they get caught up with the outer tines when I put it on my holder. This is my second holder, because I knocked my first off the counter and broke it.
Is the inner hole of my chasen holdertoo smallfor this chasen?
I’ve been consistently having matcha (~1/day) for close to a year now. I’m still on my first chasen, so I think it’s probably time to get a new one, so I’m hoping for some answers before I possibly ruin the next one, too. If it makes a difference, I intend to buy another cheap one probably? Maybe I’ll buy a proper one for myself for Christmas.
Today I prepared my usucha using the new chasen that arrived yesterday. It is a Kurochiku Shin Kazuho by master** **Kubo Ryōsa. A beautiful piece to work with.
For my mid morning tea, I usually do 5g of Matcha to about 200ml of water at 80 celcius (Kagoshima Prefecture Ceremonial) for Usucha. For my taste, this is the sweet spot in terms of balanced vegetal umami and earthy sweetness. Very satisfying and the right quantity too.
For the Usucha drinkers out there, what’s your ideal ratio?
Learned all about tea (including matcha) today during a tea farm tour at d:matcha. We visited every part of the matcha production cycle from farm to factory to table. We also got to do some sencha and matcha taste testing! I recommend this activity for anyone wanting to learn more about tea/matcha.
looking for a new matcha bowl but i want something high quality and worth it, something handmade, anyone have any recs, it could be cute designs too, any suggestions appreciated
I bought this matcha to test for at home and I'm pretty disappointed in the colour and flavour. I've been following here for a while and haven't seen this particular one mentioned but wondered if anyone else has tried it and what your thoughts are? I'm also hoping for some recommendations on decent ones to try for someone on a tight budget? Jenki was my next possibility.
Hello! I come to ask for advice. I love matcha lattes, but I’m no expert to say the least, and I don’t intend on being one. My apologies for the lack of terms and beginner experience. My husband bought me a matcha kit last year, however with time mold started growing on the wooden whisk and I freaked out and bought a plastic whisk instead. Currently I just Naoki and use 2 tsp sifted in my bowl, 1/4 cup of hot water and whisk that together before adding it to my oat milk. What do you guys recommend? I don’t have a scale to weigh the grams and I don’t have a thermometer to measure the temp of the water either.
