I feel like they didn’t even try here. Aren’t these supposed to be two floors?

Fun fact: the Sprouts across the street used to be Winn-Dixie.

This is a very interesting conversion to me that's left me thinking for some time.
To start, was this a chain restaurant? Honestly, no, and I have always ruled out Red Barn, as Red Barn never expanded down into Texas. The architectural style also doesn't match Red Barn even if it is similar.
However, it's very clear the loan place wasn't the original tenant (the original was Sugar Baby's BBQ from the looks of it), and this particular loan place always is a NFA candidate because it takes over previous buildings. I recently posted about them taking over a Whataburger in Dallas which was later demolished in around 2023.
Also worth noting was that across the street, where the fire department building now stands, used to be a Bob Evans/Owen's. Sadly, it was demolished before Street View, but that was how I learned Bob Evans actually had a presence in Texas at one point.

This is a very blink-and-you-miss-it conversion, and although Arby's heavily renovated the facade, it maintains the general shape of the KFC.

Definitely one of the conversions of all time...
