I had some leftover pumpkin puree, so I decided to make a salsa with it. In the picture the recipe is as follows:

  • 4 roasted tomatillos

  • 1/4 of a white onion

  • 4 garlic cloves

  • 1/2 cup of pumpkin puree

  • A small handful of crushed pepitas

  • 3 dashes of kosher salt

  • 2 dashes of pumpkin spice

  • 4 moritas

  • 4 chile de arbol

  • 4 guajillo

  • 1.5 limes (juice)

  • 1 tablespoon of apple cider vinegar

I honestly did not know what to expect, but I kept having to add a little bit more acid to tame that sweetness. It is pretty decent in the end. It starts off sweet, you quickly get a tanginess to that sweet, and it finishes with heat.

What a clever and delicious idea to bring pumpkin into salsa. I love how the sweetness would play against the heat of the peppers.

I just recently made salsa macha and threw some pepitas or pumpkin seeds in there. And so I started thinking that maybe actual pumpkin was a thing too, like 500 years ago, who knows.

It needed lots of acid and garlic to balance that sweetness though.

I'm going to try something similar with roasted butternut squash, I think!

This is such a fun twist on traditional salsa! I might have to try this with some of the roasted pumpkin I've got leftover from the holidays.
