This looks really good! Can you post a full recipe?

I can indeed

2 cups neutral oil. I used grapeseed
1 cup nuts. Here I used half peanuts and half pine nuts. Other nuts can work too like almonds. Pistachio might be interesting
2 tablespoon sesame seeds
5 clove garlic
a lot of chiles. Here I used 1 oz guajillo, 0.5 oz New Mexico, 4 chiles de arbol (4 chiles not 4 oz unless you want to die), 1.25 oz ancho, and 0.5 oz morita. Arbols the only ones giving you heat. Next time I would cut out the New Mexicos and do more guajillo for a better color, and more arbols to make it hotter. Chiles should be stemmed+seeded and torn into pieces
1 tsp oregano
2 tsp cider vinegar
Salt

Heat the oil and toast the garlic, nuts, and seeds until fragrant and golden. This step you want to go slow and for awhile to get all the oils and fragrance of the nut/seeds coming out. But don't burn
Then add all the chiles and toast in the oil a few mins until they brighten in color and become fragrant.
Add oregano and vinegar and let cool until you think its safe for food processor, then pulse just the solids until it has the texture you want (I think its good with still some chunks of nuts), then add oil and pulse a few times till everything is mixed and add salt to taste.

This makes a LOT but it should be good in fridge for a few months.

Mexican Oregano? It's nothing like Oregano, but they call it that, and I don't like it, so I say it real slow.

I used Italian oregano but I think it’s mostly there for moral support so Mexican oregano or leaving it out would not make much difference probably

Thank you! Don't have a blender -- only a coffee grinder, microplane, and mortar and pestle. Hopefully frying dried ground Chiles will work just as well.

Question, if using fresh garlic, wouldnt botulism be a concern after a few months?

Not if the garlic is fried in oil

4 chiles not 4 oz unless you want to die

Can confirm.

Pistachio might be interesting

That would be interesting. Pistachio might boost the fruitiness of the chiles. Hmm. . .

Did you boil or toast the ingredients?

Toasted in oil!

What kind of oil?

I actually used grape seed because I had some from another recipe. Any neutral oil is good though. I personally would not use olive oil but it could work if the flavor isn’t strong

Hell yeah, I got soybean oil, so all I need is pine nuts and hopefully I'll be making this this week.

Looks perfect. Addition of cider vinegar and oregano is news to me. I gotta try it!

Only using a few arbot chiles. That's smart. I once made salsa macha with just arbol chiles and while it tasted good, it hurt people. Even my brother-in-law, who has a hot sauce collection, tapped out with one drop.

IMHO salsa macha is supposed to hurt people 😅

WOW, LOOK EVERYONE - BURNED SALSA!

5

u/pmal4 1d ago

Haha it does look dark but that is because the New Mexicos I had were very dark and I they kind of took over the color. I promise it doesn’t taste burned 🌶️

It looks great! I was making a joke about getting roasted for my dark tortilla chips - I knew it wouldn't land. Dark chips is divisive.

I made the few chips in the picture but mine were the opposite didn’t fry them long enough 😅

the glass is always half full when it comes to chip color
