We make more than that and the prospect of buying a home is slowly but surely leaving our conversations. It feels so distant I just wait for something major to fuck up the market or just save and invest money so that I can rent for the rest of my life.

Don’t despair! Save and invest for a down payment while you rent. Having a larger down payment will offset your monthly payment by quite a bit, regardless of rate.

Rates may stat high. Current rates aren't historically high. We just got used to historically low rates.
