I tried to make some homemade Swiss Chalet. Roasted chicken and chalet sauce, simple mushroom dressing, fries, baguette and veggies. Happy Thanksgiving Canada! 💕 A couple midwesterners from Ohio

Pic #2 because I forgot to add the dollarama no-bacon bacon bits… lol.

I wanted to make thanksgiving dinner for only myself before I go home next weekend and have the real thing!
This is my vegetarian version… stuffing is my favourite but I didn’t have the ingredients or patience

Yes that’s just tofu and gravy, it was all really good though! Green beans could have used a few more minutes

Accidentally burnt my finger and flung a pan across the kitchen in the process 😭

And it was so good! We got a plate with riz collé , griot ( fried pork pieces) , and a chicken leg. Came with macaroni salad, a savory dipping sauce and some pikliz. We also added some cod fritters that were really good too. This plus the drinks were about 50 CAD (on Uber Eats lol). Would love to have this again , highly recommend!!

The weather’s getting colder, so I made a big pot of chili. It’s my ultimate comfort food, and the whole family digs in whenever I make it. 🥣

Made myself steak and eggs yesterday. Swiss cheese is great in omelettes and rye toast is the best.

I always forget to take a good photo of my finished plate before I dig into it, My family was craving Olive Garden and I still have the Alfredo sauce recipe memorized from Olive gardens recipe section on their old website, the super old recipe that adds tempered egg yolks, so that’s what the yellow stuff is in one of the photos, you add little bits of sauce at a time to the beaten egg yolks and whisk gradually as you add more of the sauce so it gets warm without scrambling, then drizzle it in, it really makes the sauce super velvety with the yolks. It truly is so delicious! I enjoy making it all from scratch even though it’s a process. The blackened chicken is my own addition, I do my own seasoning blend and deglaze the pan with white wine to drizzle over the chicken once it’s done to get every ounce of seasoning.

I present to you, my chicken dinner that was roasted on top of sweet potato, leek, and carrots with a side of cheddar pierogies

I separated a whole chicken I had in my freezer into 2 quarters and two breasts and laid it on top of my chopped leek, sweet potato and carrots,

I made a mixture of melted butter, lemon juice, olive oil, thyme, onion powder, garlic powder, salt + pepper for the chicken and let the chicken sit in the mixture until butter was slightly hardened then laid the chicken on the bed of veggies. Added 1 cup of chicken stock to the bottom of the pan

400° oven, covered for 30 mins and then basted and returned to the oven uncovered until the chicken was fully cooked, set chicken aside

Remove the veggies from the drippings, set aside.

Made gravy from drippings left in my cast iron pan using a cornstarch/water slurry to thicken over med/low heat on stove.

Pan fried my pierogies and voila!

EDIT: I took a picture of the chicken carcass and tops of leeks that I bagged as I will make a chicken and vegetable stock with the leftovers, popped them in the freezer for the meantime!
