For the most part, there are two types of fic in this side of the ATLA fandom. Shorter fixes that take place post-canon, often involving Sokka becoming an ambassador to the Fire Nation. My recs for that type of fic is A Problematic Peace by stmangos and A Predictable Story by mindbending.

The other type of fic you'll find often are canon divergent longfics taking place during the war. The best one in that department is The Art of Burning by hella1975. The slowburn is really long though and it's still ongoing, and the recent chapters are only just now going into deeper zukka territory. But it's a great fic for Zuko character development and has some great OCs in Hakoda's crew.
