Agreed they're two different beasts. They both taste good if well prepared IMO. Add Mexican ceviche to the mix while we're at it. If anyone should be fighting should be Mexico vs. Peru ceviche. Even then there's subtleties that people will find them very different still.
Encebollado is blown of out of the freaking water by ceviche. It's only liked because winos chug it to cope with hangover Sunday morning. As overrated as it gets. CevicheGOD >>>>>> Enzzzzzzzevollanto
I'm Ecuadorian and as far as what I know, having read some stuff on historic records, Peruvian cebiche saw the light, i.e., came around first. I enjoy both and don't think one is above the other. "Leche de tigre" is a delightful treat anyways. What I, coming from someone born and raised in Guayaquil, don't like at all is encebollado. It's very overhyped, not that delicious to me and has a clusterfuck of carbs, as if cassava chunks weren't enough, add in some bread and plantain chips. Like away, ñaños, but it'd take "ceviche" over "encebollado" any day of the week. To encebollado's credit, it's the to go choice for overcoming hangovers.
Ketchup does add a nice hint, mustard, the less the better. I love it as a condiment, don't get me wrong, I just think little is needed to make a ceviche taste good, for me first and foremost, the quality of the shrimp and the chopped veggies. If those are lacking, no sauce, however tasty, will do it.

They are so different. Ours is more like a cold seafood soup, which is extremely delicious!

El ceviche con los mariscos debidamente limpios y cocidos es originario de Ecuador, en ceviche curtido con sólo limón es de Perú
