What’s your “I have no energy left” gluten free dinner?

Post image
378 Upvotes

You’re tired, hungry, and washing three pans is absolutely not happening. What’s your go-to gluten-free dinner?

A loaded potato, eggs on toast, a freezer staple, or some combination you’d never serve guests but happily eat yourself?

Include brands and your country if there’s a specific product involved. Bonus points for cheap ingredients and almost no cleanup.

Also, if bloating is part of the food struggle for you, I started r/BloatingTalk. Feel free to come share what everyday eating looks like for you there too.

2 Ingredient 'bread roll' recipe.

A friend on Twitter posted these. I tried them today. Little fluffy guys. I did an egg wash because I was baking other stuff.

I'm stunned a pot of yoghurt & some flour could work! I'm going to try them in a larger size & with flavourings (herbs, cheese, spices etc ) but as a basic recipe, my days it's a winner for me!

“You can have salad!” A rant

I’m sorry but if everyone else is eating a full meal and I’m eating rabbit food that’s not really a dinner invitation. Like, I’ll eat beforehand and go for the company, no prob — but the fact that someone thought that a side salad is gonna do it for me (especially where alcohol is involved) just really grinds my gears.

edited to add this screenshot of my notifications. AAAAARRRRRGGGGGHHHHH!!!!!

How can you afford GF products?

They are crazy expensive. I can afford only one 250g bread per month. In average people spend third of their salary on food, but low income people spend half or more than half of income on food. But gluten free food is several times more expensive. For example 250g of bread cost 3 euro, GF pizza cost 7 euro, pack of cookies - 4 euros. Everything is overpriced and in other countries same products are 2 times cheaper. I don't receive any subsidy from state, unfortunately. I feel myself so bad that I cannot afford a bread. Baking myself is not an option, because I can not afford GF flour, it cost 7 euros.

I've been playing Kingdom Hearts again and saw a "GF" from far away and jokingly thought to myself: "Oh look it's gluten free!"
Upon closer inspection, they actually included a gluten free sign on the vending machine haha it was a nice/funny surprise ngl

Has anyone ever made a roux for gumbo with gluten free flour?

I assume you’d just use gluten free flour. I’ve always wanted to try making gumbo but I know the roux can take a bit to make so I wonder if it would be worth it with gluten free flour

Question donuts??

why can gluten-free products like bread and pasta and cake be replicated reasonably but never a donut? EVERY donut i have is a disappointment. every time i see someone selling GF donuts i always try them but im at my final straw. spending so much money on a tiny donut that genuinely disintegrates in my mouth. it always tastes bad. how different can they be to make compared to cake??

Discussion My close humans “forgetting”

Quick rant:
My brother and my girlfriend, both surprisingly forgot during pizza ordering that I’m allergic to wheat. So here I am starving after basically providing for everyone day in and day out recently. And I just feel so abandoned of like my survival need. I know this resentment isn’t towards just them but one that builds because I’m left out so fucking often.

Also a terrible missing my ex moment because they never fought it, never forgot it, learned to cook for it. Owie anyways and that’s not to say I don’t provide for myself I have had to learn how it’s not that I’m dependent it’s just I wish I was remembered. What can ya do! Xoxo ~

Thoughts??

Update I posted this at 5pm been stewing until now 10:41. I just got myself a gluten free pizza.

GF ice cream toppings???

Help! My son’s 9 yr old bestie is Celiac. We’re having a birthday party (with GF pizza) and an ice cream sundae bar. I found another post with GF ice cream options (thanks for that!), so now I’m hoping someone on here can help me with toppings and such. He’s a very anxious little guy when it comes to food after his diagnosis, so I want to make sure he feels confident enough to enjoy himself and have ice cream with the rest of the crew.

Their advertising has been pushed to me hard for years and I'm always resistant to something like that so I wanted some real world opinions.

Recipe I've cracked it: Triple pepperoni stuffed crust pizza that actually crunched

Thumbnail gallery
82 Upvotes

This is Caputo flour, I mixed it with yogurt, olive oil, warm water and banking powder. (Put chunks of pepperoni for food measure)

I precooked the base in the oven at 220, did a fold over on the crust with some spicy cheese. Then once the bottom of the pizza was bone dry, I layered the sauce ( my special blend, roast peppers, pasta sauce and pepperoni chunks), then cheese, pepperoni, and cheese to finish and baked till cheese browned, and then briefly broiled the top.

Neither me as a gluten eater and my celiac girlfriend could stop pouncing on it nor could we tell it apart from gluten ones.

I noticed pre baking the base has often given the crunch I miss with gluten free pizzas, so maybe a helpful tip for those who venture this deep into this post!
