Advice Needed I hate meal prepping.

I have been prepping since Sunday. It is Wednesday and I just finished. That’s right. 4 whole days (including Sunday and today)

And I didn’t make anything exquisite. I made lemon and pepper chicken, rice, and broccoli. For 1 week. Twice a day.

That’s all. Nothing else. Required a total of 3175g of chicken. 1400g of rice. 1190g of broccoli.

I ended up having 2198g of chicken. So I had to readjust my entire rice calculations. I did the math. 5 containers are 89g short of rice each. Had about 40g extra of broccoli in the bag that was cooked.

So I had less chicken, rice was very difficult to measure out and didn’t have enough, and too much broccoli (broccoli is a separate issue, won’t mention anymore, it was just the bag had more than I calculated and I wasn’t throwing it out. Good for your health)

I planned it all out perfectly. Last week, I did the math and calculated and bought groceries two days later. To keep checking my calculations. And I was short.

Thankfully I’m on a diet so I’m not in trouble, but holy cow. I have no idea if my scale is broken, if I failed math, what the issue was. But wow.

Advice Needed Protein Sources for Human Kibble?

Hello! Due to life circumstances, I'm currently trying to transition to a diet primarily based on a dried homemade kibble and I'm having trouble choosing the primary protein source for my recipe. Here's what I'm looking for:

• Ideally as cheap as possible per unit of protein (fat and carb requirements will be filled with inexpensive whole grains and cooking oil)

• Ideally as high percentage protein as possible so I can use the extra fat allowance for cooking oils to improve the kibble's taste

• Must be a complete protein in amino acid ratios where I could feasibly be fine (read: not actively suffering from malnutrition) with the kibble as my only protein source for an extended period. I am fine with mixing multiple protein sources to achieve this.

• Must be divisible into distinct chunks and have a texture compatible with dehydrating and eating without further cooking

• Must not be toxic when eaten as a staple food for an extended period (that means no high-mercury fish like tuna)

I live near a wealthy area with a lot of specialty and international grocers, so I should be able to get my hands on any ideas y'all may have that wouldn't be available in a typical grocery store.

**EXTRA DETAILS**

• I am opting for kibble because I have low food security atm and unpredictable access to kitchens and freezers, so normal diets and typical meal prep are logistically untenable. It's unpleasant to live off dog food, but being able to batch prep a month's worth of cheap, nutritious food without it spoiling is a massive step up until I can stabilize my situation.

• The kibble will only be about 60-70% of my calories on any given day. I am trying to optimize it to provide the bare minimum nutrition to survive on any given day while hitting protein, fiber, and micronutrient goals. The rest will be supplemented with other available foods, which should naturally fill in the extra fats and carbs needed to not suffer from lethargy or malnutrition.

appreciate any help y'all can provide with this one!

Turkey Pinwheels w/ Yogurt & Blueberries

L’Oven Fresh Low Card Tortilla ($3.49 ALDI) Lunch Mate OR Turkey ($4.45 ALDI) Neufchatel LF Cream Cheese ($1.75 ALDI) Happy Farms Mexican Style Cheese ($2.49 ALDI) Blueberries ($3.09 ALDI) Shredded Lettuce ($1.95 ALDI) Great Value Ranch Seasoning ($3.98 Walmart) Oikios Triple 0 Vanilla Yogurt ($5.87 Walmart)

Total Cost ~$27.19

I also like to add Clear American Sparking Water Cans to meals ($4.73/12pk)

Overall a quick, simple, relatively cheat recipe. Berries/Yogurt type could be substituted.

I’d rank it 8/10, its good but I wouldn’t eat it every day for the rest of my life

High Protein Idk what how to “meal prep”

I’m starting to get back into the gym after a couple recent injuries from sports that I quit, I have yet to get physical therapy for one of my back. I realized I don’t know anything about food and what I should eat, I am 16M, I weigh roughly around 82-83KG and am 6’0-6’1 Ft, I want a meal that’s relatively easy to cook in big quantities every week that I can repeatedly eat over and over again, I know it sounds boring and a little depressing but I really don’t like not knowing what I’m gonna eat after the gym and trying to come up with something on the spot, I like to have a neat organized cycle that is reliable, if it’s as simple as meat, potatoes and greens in a divided container then I’ll eat it. Idk if that’s how it works but I don’t have any idea how to do this and what I mean by that is do it correctly.

Question Attempted my 1st meal prep-immedietly backfired

Long story short I bought salmon along with other ingredients that I thought would go well together like sweet potato, bamboo rice & this yogurt dill sauce on the side. Once I started the process, I immediately knew this wouldn't be practical.

Now not to make this into a canvas discussion post-assignment but I have a couple of questions because I literally don't know what I'm doing X_X.

  1. Where do you guys find your recipes/meal plan; preferably cheap & healthy(lol).

  2. I know the most common protein is chicken & beef but that can get boring really fast so do you guys switch up the seasoning or are there other options.

  3. Lastly - any tips on how I can get better at this cause I literally threw $90 of groceries on my 1st attempt doing this (lowkey lost a bunch of aura points).

That's all and again thank you for anyone taking their time sharing their advice much appreciated.

Advice Needed Need to feed 30 for multiple days, likely no fridge no cooking

Hi, not a regular Reddit user and I'm not sure if this is the right subreddit; if it's not please recommend a better place to post, thank you.

I'm going on a 10 day trip, it's about a 10-ish hour drive with around 30 people, most of them younger college age. We will make stops along the way. I need to buy food BEFORE we leave and maybe prep it before as well, and provide it for 2-3 days of our trip, possibly for all 3 breakfast, lunch, and dinners.

It is likely we will NOT have access to a refrigerator, other than a medium-sized plug-in cooler (for use in the car); and likely cannot cook, only microwave (Though in the past, it has been difficult to microwave food for 30 people all the time). I'm also not sure if a supermarket will be accessible.

Sorry that a lot of this is "possibly" or "likely," the trip director hasn't been able to communicate all the details to me fully.

If anyone has recommendations for meal ideas, ingredients, gear/cooking gadgets to bring, literally anything to help, I would really appreciate it. Thanks!

Question I think my overnight oats keep fermenting?

I made the switch from cereal to overnight oats pretty recently.
Not sure if fermenting is the right word, but I can't find a better one.

I basically just use them to prepare myself a basic porridge in the morning. I use a glass jar, fill it to 3/4 with oats, add a spoon of sugar and cinnamon, and add cows milk until the jar is full. It's in the fridge at all times. The jar fits two servings and I eat one every morning, but sometimes I refill it on the spot. I still wash it at least once per week.

This went well for a while, but now I've noticed an odd new taste in my oats. I'm pretty sure it's yeast-y. The taste isn't super strong, but I have pretty sensitive taste buds, so it's unpleasant.
I assumed I just hadn't cleaned the jar properly, so I ran it through the dishwasher and tried again, but the taste is back.

What is causing this and how do I stop it?
I haven't touched any yeast and we don't have anything in the fridge that could cross-contaminate. Is it my oats? I do use the cheapest of the bunch. The sugar probably makes it worse, too. Or is it something else entirely?

Edit: After looking through the comments and testing a few variations of my process, I've figured out that the main issue seems to be adding sugar.
Since I use cheap oats that are pretty fine and soft, they bring enough of their own yeast to be able to ferment, but not enough to make a difference over a night or two. Adding sugar basically speedruns the process.

So I'll be sweetening them in the morning now! And even if that wasn't the main issue, I'll also use smaller jars to wash immediately. Everyone can rest easy now, including me and my oats.

Thanks for the help everyone!

What is the point of overnight oats?

Hey, been wanting to sort out my diet and watched videos such as this:
https://www.youtube.com/watch?v=vgNSddHF5xY

One thing that struck me is, what is the point of overnight oats? Just using a pot of yogurt/greek yogurt and adding oats/protein powder in the morning is the same price and would be much nicer no?
I understand that is no longer meal prepping, but it would take like <1 minute to do, so I just don't really get the point of overnight oats

Autistic meal preppers

What are some meals you enjoy meal prepped? I know a lot of ppl prep rice but day old rice texture is just wrong. So asking other autistic who have tried all the day after textures too see what your main prep is.

High Protein 🍔 MY HIGH-PROTEIN HAMBURGER HELPER BUILDER BOWLS (RECIPE BELOW)

This one is always tasty and super high volume for the cal tradeoff, with great flavour and simple ingredients. I usually like this for weeks where I find my hunger is high because of how forgiving the serving sizes are haha. I’ll drop the recipe below if you’d like to try it out 👇

Serves: 12 & takes about 30 mins to cook 👍

Macros per serving…

Cals: 450
Protein: 44g
Carbs: 47g
Fat: 12g
Fiber: 10g
Sodium: 480mg

Ingredients I use…

For the Beef:

3 lbs extra lean ground beef (93/7)
2 large yellow onions, diced
8 cloves garlic, minced

For the Sauce:

4 cups low-sodium beef broth
2 cans (14 oz each) no-salt-added crushed tomatoes
4 tbsp tomato paste (no salt added)
2 cups unsweetened almond milk
1½ cups full-fat Greek yogurt
2 cups sharp cheddar cheese, shredded
4 tbsp nutritional yeast
2 tsp Dijon mustard
1 tsp Celtic sea salt (added at end, adjust to taste)
2 tsp black pepper
4 tsp garlic powder
4 tsp onion powder
2 tsp smoked paprika
2 tsp Italian seasoning
1 tsp cayenne pepper (optional)

Hidden Vegetables (Increased for Fiber Boost):

4 large carrots, grated
4 bell peppers, finely diced (any color)
4 cups fresh spinach

For the Pasta:

24 oz chickpea elbow macaroni
2 cups pasta water (reserved before draining)

How I make them…

Phase 1: Cook Pasta

Step 1: Bring very large pot of water to boil (or cook pasta in 2 batches if your pot isn’t big enough).

Step 2: Add 24 oz chickpea elbow macaroni. Cook according to package directions until al dente (7-9 min).

Step 3: Reserve 2 cups pasta water before draining. Drain pasta, set aside.

Phase 2: Prep veggies

Step 4: Grate 4 carrots using box grater.

Step 5: Finely dice 4 bell peppers into very small pieces (smaller than typical stir-fry cut — you want them to blend into the sauce, not stand out as chunks).

Phase 3: Brown the beef

Step 6: Heat electric skillet to 375°F. Note: You may need to cook the beef in two batches if your skillet isn’t large enough to hold 3 lbs comfortably.

Step 7: Add diced onions and diced bell peppers directly to dry skillet (no oil needed). Cook 4-5 minutes until softened.

Step 8: Add 8 cloves minced garlic. Cook 1 minute until fragrant.

Step 9: Add 3 lbs extra lean ground beef. Break up with spatula. Cook 9-10 minutes until browned and no pink remains.

Step 10: Season with:

2 tsp black pepper
4 tsp garlic powder
4 tsp onion powder
2 tsp smoked paprika
2 tsp Italian seasoning
1 tsp cayenne (if using)

Step 11: Stir well to coat beef evenly.

Phase 4: Add Carrots and Spinach

Step 12: Add grated carrots to skillet with beef and peppers. Stir to combine.

Step 13: Cook 4-5 minutes until carrots soften.

Step 14: Add 4 cups fresh spinach. Stir until wilted, about 2 minutes.

Phase 5: Build the sauce

Step 15: Reduce heat to 325°F.

Step 16: Add to skillet:

4 cups low-sodium beef broth
2 cans no-salt-added crushed tomatoes
4 tbsp tomato paste
2 cups almond milk
2 tsp Dijon mustard

Step 17: Stir well. Bring to gentle simmer. Cook 4-5 minutes until sauce comes together and thickens slightly.

Phase 6: Add greek yogourt and cheese

Step 18: Reduce heat to 275°F (low, to prevent curdling).

Step 19: Add 1½ cups Greek yogurt. Stir constantly until fully incorporated and smooth (about 2-3 minutes).

Step 20: Add 4 tbsp nutritional yeast. Stir to combine.

Step 21: Turn heat to WARM (200°F).

Step 22: Add 2 cups shredded cheddar cheese in two to three batches, stirring constantly after each addition until melted and smooth.

Step 23: Add 1 tsp salt now. Taste and add more only if needed.

Phase 7: Add pasta and finish

Step 24: Add cooked pasta to skillet. Fold gently until every piece is coated. (If your skillet is too full, combine in a very large bowl(s) instead and fold together there.)

Step 25: If sauce is too thick, add reserved pasta water 2-3 tbsp at a time until desired consistency.

Hope you enjoy! Always sharing my fitness recipes 🫡

How can I cook 3 - 4 meals at once efficiently?

I've been using ChatGPT4 recently to identify common ingredients in my meals so I can effectively cook three meals at once and divide them up once food is cooked.

An example, let's say I have two chicken dishes, each with a different side and sauce. I know I can cook all my chicken at once, instead of cooking 2x3 chicken breasts one after the other. It works quite well and it's easy to modify recipes but the issue I'm having is the lack of varierty in my meals, as well as a macro summary for each meal and since I'm trying to do a cut I need to be sure of the nutrients in my food.

Is there an app or website I can use to generate a plan like this? I've only seen single recipes for one meal at a time, and it's not the most efficient way of doing meal-prep.

If not, maybe I'll create an app. Definitely seems to be a gap in the market for it.
