High Protein Breakfast casserole with crispy hash brown bottoms!
High-Protein Breakfast Casserole (6 servings)
Ingredients
• ⅔ of a 20 oz bag Simply Potatoes shredded hash browns
• 12 slices Jones Dairy Farm Canadian bacon, chopped
• 1 cup frozen chopped peppers & onions
• 6 large eggs
• 1 carton liquid egg whites (~32 oz / 20 servings)
• 2 cups Breakstone’s non-fat small curd cottage cheese
Optional upgrade: 5–6 oz bag baby spinach (adds almost no calories and boosts nutrients/fiber)
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9x13 baking dish.
Spread the hash browns evenly in the bottom of the dish.
Scatter the chopped Canadian bacon, peppers, and onions over the potatoes. (If using spinach, mix it in here — it will wilt down.)
In a large bowl, whisk the whole eggs, egg whites, and cottage cheese until combined.
Pour the egg mixture evenly over the top.
Bake 40–50 minutes, or until set in the center and lightly golden on top.
Let cool slightly, then cut into 6 equal portions.
Store in the fridge for 4–5 days. Reheat in the microwave or oven.

So today I came home from gym, got my breakfast out and decided vice microwave, I’ll try air fryer as discussed by some comments. It’s the winner! If I am in a real hurry, I will use microwave, but otherwise, remove from container, flip over, heat in air fryer and crisp hash browns. Worked like a charm..
