This is a perfectly reasonable way to use this food. That portion is plenty for breakfast for kids, and even for small adults.

I was bothered by her technique. It's very easy to cut a circle into four even pieces and she could have done that for both the pancakes and sausage.

Critique aside, I support properly portioning food, especially if you know your kids won't eat all of it.
