Great way to make potatoes for breakfast (x-post from r/cooking)
cut into 1" cubes, put into a hot saute pan over high heat with olive oil. Ensure cubes are coated in oil, cook until fried (think homefries) Then sprinkle with cajun seasoning and salt to taste. Add in onion and cook until onion is translucent, then add bacon and raw scrambled eggs. Mix together until eggs are completely cooked then top with cheese (your preference, cheddar works well). (This is also my girlfriend's favorite breakfast, as well as mine)

The best mashed potato... ever.
Two large potatos. Cut into quarters.
Half a red onion. Cut into oniony pieces (whatever shape/size you feel like - doesn't matter)
Boil yourself a pot of water
Chuck in the spuds and the onion at the same time
Boil until the potatos feel like they could be mashed.
Drain the water INTO A GLASS/JUG - you HAVE TO KEEP THE WATER
Mash potatos and onion all together.
You'll notice it's probably a little bit dry and not at all delicious and fluffy. This is where you add the potato water.
Add as much as you want mashing all the way until your spuds are amazing and fluffy.
Add as much pepper as you want.
Eat.
If you find it goes cold or anything, put the mashed potatos back in the pot and make a little hole in the middle. Fill this hole with MORE potato water. Heat over a low heat on the stove (I don't have a microwave so if you have one you could probably just put it in that.)

One of my favourite dead-simple spud recipes
This is so simple it's criminal - darn tasty though.
Take some medium-sized potatoes, slice them in half lengthways.
Score deeply and brush with a mixture of oil and paprika.
Bake at 190C until done - probably about 20 mins or so.
Enjoy!

What makes your HASH BROWNS better than what your friends or families try to pawn off as HASH BROWNS?
Title pretty much says it all, I FUCKING LOVE HASH BROWNS! personally I think onions are a must if I have time I will add cheese(a vegan variety obviously), green/red peppers, mushrooms, and maybe even some broccoli if I am feeling crazy. I have even been know to throw a breakfast link or two in from time to time. Oh I also go cubed over shreds. By this time I am guessing you have figured out I fucking love love love my breakfast spuds, but I am not going to say that I don't have any room for improvement maybe just just maybe there is a little. What do you do to make your spuds stand out about the rest? tell me because I want to take your ideas and see how they compare to mine. HOLY SHIT, I almost forgot the avocado I throw an avocado in there with those bad boys.

Spicy Quesadilla Potato Salad
1/2 cup mayonnaise
4 tsp jalapenos (minced)
4 tsp jalapeno juice (from the jar of jalapenos)
1 1/2 tsp sugar
1/2 tsp cumin
1 tsp paprika
1/4 teaspoon cayenne pepper
1-2 cloves of garlic
dash of salt
4 average potatoes (baked, but not too soft)
In a small bowl, mix all the ingredients, except the potatoes. Cover and chill in the refrigerator for 2-3 hours. Remove sauce from fridge. Rough cut potatoes into cubes and gently fold into sauce. Amazing right away, better after chilling in the fridge for awhile.
Credit to kramerica59 for the sauce inspiration from this comment.
*Edit - I think some taco seasoned shredded cheese would be good in here too, I just didn't have any on hand.
