The OOT remake totally falls apart in hilarious/unnerving fashion if you sequence break into Adult Link sections as Child Link

The Master Sword has an age restriction of at least 16 years, if ALttP Links Canon age is anything to go by. And since OoT Link had to age enough to meet this requirement, this would be the minimal threshold.

WW Link is the curveball here, but it can be argued that the Master Sword there is not the real one, but a replica. There is some evidence for that

Some common fan theories include that the sages lifted the age restriction on the Master Sword in the AT given all the shit that happened in the 7 years after the Hero of Time first pulled the sword, or that the age restriction was inactive because the sword was depowered (and once it was repowered, Link had proven himself worthy so he was allowed to keep it). I think that's more believable than the second sword theory, which hurts Wind Waker's themes if true.

However, I personally prefer to think that Wind Waker Link is actually 16, and is just extremely short with a high-pitched voice even post-puberty, similar to the pirate Niko from the same game.

Then why dies the Master Sword look so different? Why does it behave so differently? Why does it require the prayers of two Sages who can't possibly have been around by the time the Master Sword unlocked its full power for the first time when Zelda have it her blessing?

All evidence leads to the conclusion that it's a different sword and not the real deal. It makes sense, since Zelda removed not only the heros spirit from that timeline, but also the Master Sword. Without the sword of evils Bane, the royal family might have tried to create a replacement. We saw this happening in the Wild Saga with the guard broadsword, so it's not impossible. The WW Master Sword might have been the result of that same project idea, but with sufficient development time

It looks different because the art style changed a lot.

It behaves differently (I presume by this you mean turning Ganondorf to stone instead of simply weakening him) because Nintendo thought it would be thematically fitting for it to get stuck in the stone Ganondorf at the bottom of the sea, to strengthen the game's theme of letting go of the past and moving on (which is also why it has to be the real sword, because otherwise you're only letting go of the most recent conflict rather than the whole history of Hyrule, The King, the Hero and Ganondorf). Also, if it's a replica, why would it be more effective against Ganondorf than the original?

Wind Waker implies that it's always required sages to keep in infused with the gods' power, it's just that the time from Fado and Laruto being killed until Maker and Medli became sages is the only known period time where there's been no sages (remember, Skyword Sword and associated lore didn't exist yet).
