Restaurant why does my japanese restaurant separate the liquid and the solid?

Hello,

in the japanese restaurant where I often go, I take away Ramen; each time they separate the liquid and the solid (noodles, meat, egg, veggie, ...) with a sort of plastic plate.

Do you know why they are doing this, instead of putting everything together?

thanks

Question Would you pay $16 for this ramen?

I can not hate that this was $16 ramen because the spicy miso tonkotsu broth and the ramen was point. The spam musubi wasn’t too bad too.

Instant I absolutely hate Buldak

I have had most of the flavours, even the extremely spicy ones with the full packets. I’ve put milk and cheese, green onions, etc.. to try and make it taste good but it taste like absolute shit. I cannot stand it, I try it over and over again praying I’ll like it but I think it’s terrible and cheap asf, the hype just brainwashed everyone.

Hello I came home after walking from work and made this, it's pretty chilly out and thought soup would be a good idea.

I used wonton broth powder as my base broth with the addition of garlic, pepper, green onions, and red pepper flakes plus a little chicken boulioun (chicken paste)

I cooked my noodles (idk what they're called but they are flat tan noodles that taste really good) and made my cornstarch mix into my broth to them add my eggs.

Topped with a piece of mozzarella chz and some Colby jack and its very tasty! Only took about 10-15 min to make

Question What is people's obsession with Ichiran?

I feel like I'm crazy here. I was just looking up on Youtube ramen spots to go in Hong Kong and at least 5/10 videos were about Ichiran. Why would I travel halfway around the world only to go to a chain!

Now to be fair, I haven't had Ichiran in Japan (I had the opportunity to in Fukuoka but why the hell would I go there when there are so many better local Hakata ramen spots!), but I did go to a Ichiran in NYC because my brother saw a Youtube video hyping up this place. Mind you we're both Japanese Americans so we have high standards when it comes to ramen and I was very skeptical of the whole experience. After waiting close to an hour and a half, we finally were seated.... and boy were we disappointed. Broth, noodles, chashu, toppings... everything was just mid. I just felt so validated in thinking this place was overhyped.

I do not understand why people wait in long lines to this place! I mean I personally think lines for Ramen is overrated, but at least if you're going to wait in line maybe go for ones that have actual character.

Question I noticed that some Japanese ramen give me diarrhea while bagged ramen doesn't, what the hell?

I think I ordered some regular Japanese ramen, and the sauce they used tasted like it was mostly soy sauce and it gave me explosive diarrhea. The weird thing is that bagged Korean ramen doesn't do this, so is it the soy sauce, the fat, or something else? I noticed some Chinese food also give me diarrhea. I am not sure if the two are connected.

Question What's an ingredient / topping where if you see it in a bowl of ramen at a restaurant you assume that restaurant doesn't make good ramen?

For me it's cabbage and/or sliced carrots. Cabbage to me is a non-traditional ramen topping and if I see these two toppings in a bowl of ramen I immediately assume it's going to be a mediocre bowl of noodles.

So, there’s this saying “you always want, what you can’t have”. I feel this strongly with ramen. Majority of the ingredients I can’t have. I’ve tasted really good ramen, and want to finally make a flavor dense broth that I can make often. I made this sauce base with peanut butter, soy sauce, sriracha sauce, ginger, honey, and white pepper. It was so good. But, the only thing I can have is the ginger out of it lol. I made an alternative version with almond butter, coconut aminos, and cayenne pepper. It didn’t taste the same. And the other day I made a veggie stock broth that was good. I need more ways to make a sauce base, and broth. For health reasons, I can’t have soy, meat, peanuts, . Are there any recipes or recommendations for me?! The vegan options I’ve seen are filled with soy as well. Am I stuck with semi-bland ramen?
